An ultra premium wine without the premium price tag (yet). Idée Fixe is crafted from the premium, free-run cuvée of handpicked Chardonnay from Vasse Felix's Lauded Heytesbury vineyard.
Made along the same, rigorous specifications as champagne (méthode traditionnelle) in a custom made sparkling wine facility that is fully equipped to complete every process from grape to final labelling within the walls of the house and is one of only a handful of its kind in Australia.
The result is a light, elegant wine with a soft, pale yellow hue and persistent fine bead. The welcoming scent of struck match fades to reveal a bouquet of ocean sea spray, Coastal Rosemary, lemon rind and crisp apple with nuances of tempting patisserie aromas. A mouth coating, citrus-infused acidity completes the powerful, quenching and persistent salt-flaked finish. This is one wine that we are extremely passionate about and one that we feel, will rapidly increase in value over the coming years.
